We live for fresh salsa in the summer. We put it on everything and have it my way, there’s always bottomless chips & salsa for snacking & sharing in the kitchen. We even plant our own salsa garden to pull from it all season long – tomatoes, jalapenos, tomatillos, garlic, onions & cilantro. I just need a lime tree.
So whether you growing your own, taking advantage of farmers markets or making your list for your next grocery store run, be sure to add this to your rotation:
It comes together quick & easy. Cut your onion in half, stems off of tomatoes & jalapeno and peel the garlic then throw everything in the blender.
NOTES:
+ Adjust accordingly. We had Roma tomatoes on hand from the garden, but you can use any – just eyeball it and shoot for 2ish cups tomatoes.
+ Use whatever onions you have on hand – red or yellow. Toss in green onion if you have some.
+ This makes for a “medium” heat salsa, add more or less jalapeno according to your preference. Adjust salt & pepper as well.
3-MINUTE BLENDER SALSA:
Ingredients:
8 Roma tomatoes
1/2-1 onion
4-6 garlic cloves
1 jalapeno
handful of cilantro
splash of lime juice
salt + pepper to taste
Blend! lower speed/less time for chunkier salsa or high speed for smoother salsa!
That’s it! Enjoy right away with your favorite chips or pour into a mason jar and let sit overnight for flavors to meld.
Will last 7-10 days in the fridge – if it isn’t gone before then!
